1 egg white
45ml (3 T) sugar or xylitol
625ml (2½ cups) coconut shavings
5ml (1 t) vanilla essence
Preheat oven to 150°C. Line a baking tray. Beat the egg white, sugar and vanilla together. Add the coconut shavings. Drop spoonfuls onto the prepared baking tray. Bake for 20 minutes.
