2 jumbo eggs, separated
375ml buttermilk or plain yoghurt or dairy-free coconut yoghurt
375ml self-raising flour (or 375ml flour with 1.5 tsp baking powder)
2 tbs castor sugar
1 tsp vanilla essence.
Lightly whisk the egg yolks in a bowl. Add the buttermilk (or other) and whisk again. Sift the flour and castor sugar together and stir into the yolk mixture. Whip the egg whites until light and fluffy. Fold them into the yolk mixture with the vanilla.
Heat a non-stick frying pan. Spray or rub with butter. Place a heaped ladle-full in the pan and cook until bubbles appear. Turn only when golden brown. Turn stove down and cook until golden on each side. Serve with cinnamon sugar, syrup, almond butter ………
