YOU CAN MAKE THEM IN A FEW EASY STEPS – HERE’S THE RECIPE!
GLUTEN FREE BANANA COCONUT PANCAKES
6 jumbo eggs
250ml (1 cup) mashed ripe banana (2 bananas)
60ml (¼ cup) water
5ml (1 t|) vanilla
22.5ml (1 ½ T) honey
125ml (½ cup) coconut flour
10ml (2 t) baking powder
Beat the eggs with the banana, water and vanilla. Add the honey.
Whisk the coconut flour and baking powder. Whisk into the egg mixture.
Leave to rest for 10 minutes to swell.
Heat a small non-stick frying pan. Spray with non-stick spray. Fry in small ladleful’s on medium-low heat until well cooked through before turning over.
Makes about 10-12
